GINGERBREAD GRANOLA

The smell of gingerbread may remind you of the holidays, but I dare you not to want to make this fragrant granola all year round! It is especially delicious on top of Honey Greek Yogurt…

Ingredients

  • 4 cups Large Flake Oats
  • 1 ½ cup Chopped Pecans
  • 1 cup Unsweetened Coconut
  • 1 tsp Kosher Salt
  • 1 tsp Ground Ginger
  • 1 tsp Ground Cinnamon
  • ½ cup Olive Oil
  • 1/3 cup Maple Syrup
  • ¼ cup Molasses

Directions

Preheat oven to 350°. Line a heavy duty baking sheet with parchment paper. Add all of the above ingredients to a large mixing bowl. Stir until well combined and evenly moistened. Spread in an even layer and bake 20 to 25 minutes stirring every few minutes. Watch carefully and remove from the oven when granola is golden brown. Don’t worry if the granola seems wet – it will dry as it cools. Make sure to stir a couple more times after you remove it from the oven so it doesn’t stick.together.

Once cooled, sprinkle (to your taste – I like lots!) with:

  • Dried Cranberries or Mixed Berries
  • Roasted Salted Pistachios, Chopped
  • Greek Yogurt Chips or White Chocolate Chips
  • Crystallized Ginger, Chopped

Store in an airtight container and try not eat all it in one sitting!
